Spain
Tenerife is an easy winter-sun option from Finland in February. The coast stays mild, conditions around Teide are very different at altitude, and the island makes it easy to combine beaches, hiking and day trips.
Portugal
Madeira's winter climate is mild and works well for levada walks, viewpoints and an active holiday. Conditions can change quickly between the coast and mountains, so it is useful to keep hiking plans flexible.
